4/2/1 cranberry sauce


4 cups fresh Baies d'Or cranberries (2 packages)
2 cups brown sugar
1 cup water
8 teaspoons lemon juice (to taste)


Combine all ingredients in casserole and bring to a boil.
Reduce and let simmer until cranberries split (approx. 5 minutes)

Pour into containers and let cool. To conserve for an extended period, paraffin and close.

Enjoy as spread on croissants, toast, rusks... As accompaniment for meats, duck, chicken, turkey, pork... As an entrée on rusks, cream cheese with a hint of Baies d'Or cranberry sauce.
